PROUDLY DISTILLED IN THE BIRTHPLACE OF SCOTCH WHISKY
The team was lead by the expertise of our own Max McFarlane. Max possesses 40 years worth of knowledge as a master whisky maker and keeper of the Quaich.
We, alongside the talented distilling team at Holyrood Distillery have produced two very distinct and flavoursome single malt whiskies.
The process began with Holyrood head distiller, Marc Watson. Marc has formulated no less than 7 amazing varieties of new make whisky, all with diverse flavour profiles. The 1st is full of esters and fruity notes, transitioning through to smoky, medicinal peat flavours on the last.
The TCCP team nosed and tasted all samples with the guidance of Marc using raw materials and fermentation lengths etc. Max pulled no punches with his feedback and critiques of the new make spirits. All the samples were uniquely delicious but for the Caledonian Cask team, there were two stand outs.
By combining Max’s widely experienced nose and palate, with the expert distillers of Holyrood we were able to tweak the samples so that they were exactly what Max had envisioned.
We were delighted with the result and continued on the journey to create our very own single malt whisky.
Following the mash, fermentation and distillation of our specially selected malt we selected casks. The whisky has been decanted into a variety of 1st Fill Bourbon Barrels and 1st Fill Oloroso Sherry, European Oak Hogsheads.
There is a long waiting period until maturation, but we feel this will be a whisky worth the wait. It is tantalising to imagine what 40 years of whisky mastery and experience poured into a unique single malt whisky will taste like.
